We are making every effort to be more sustainable and environmentally conscientious within our everyday practices.  One of the areas we are working to reduce is our use of paper.  I'm sure you've been getting requests from your bank to send you electronic statements instead of mailing printed documents.   We are not unique, however we understand that communicating with our customers is what keeps us in business.  One of the areas we are looking to go electronic is with our newsletters.  We're planning on sending the monthly newsletters via email instead of printing them and distributing them with your invoices.  We don't want to make the change entirely until we have your email address.  Do we have your email?  Our delivery personnel will be passing out post cards requesting you to join our email mailing list.  Rest easy, your email will not be shared or sold.  In each email you receive, there will be a link to unsubscribe or change areas of interest.  Your privacy is important to us.

Coromandel OystersOyster
greenratingGreen Rating by
FishWiseTM & Seafood Watch

From the Coromandel Bay in northern New Zealand, the Coromandel oyster is actually a pacific oyster that was brought over in the late 1970's.  They have the usual off white flesh of a pacific oyster, with a distinctly strong sweet and salty flavor, followed by a watermelon-like aftertaste.  They are suitable for eating either cooked or raw, and are rich in vitamins and minerals.  With a two year growth period, they are initially grown off of the bottom of cement coated wooden rods, they are then transferred to a mesh covered tray where they mature until harvesting. Because New Zealand is in the southern hemisphere, their winter is our summer, making this an excellent choice for a summer oyster.

Health Tip:  Oysters are the most concentrated natural source of zinc, which is essential to maintaining a strong immune system, supports wound healing, and maintains the senses of taste and smell.

swordfishFresh California Swordfish
CCSF-Logo Green & Yellow Rating by
CCSF-Logo FishWiseTM & Seafood Watch

As we are nearing September, begin thinking about local swordfish.  Known for its sword-like bill, Swordfish is one of the best known fish in the sea.  A migratory predator, Swordfish is a favorite of sport-fishermen despite its elusive nature.  Our product is sourced throughout the California Coast during the season as the fish make their annual pacific trek.  Mild with a distinct flavor and meaty texture, swordfish is very versatile and can be used in many different applications.   Local Swordfish caught by longline methods carries a Yellow rating by FishWiseTM and handline and harpoon methods carry a Green rating.  We will feature both methods of catch as supplies become available.

Health Tip:  A healthy choice for consumers, Swordfish is low in fat and calories and is rich in Omega-3 fatty acids.

Specialty Product

WagyuBeef
Australian Wagyu Beef "Kobe Style"

Wagyu Beef is finished for a minimum of 350 days on special Japanese formulation of grains to produce an incredibly marbled, high quality product.  This finishing method along with superior Wagyu genetics leads to butter knife tenderness.  Providing a "farm-to-plate" program ensures you can count on a consistent, high marbled and flavored product every time.
Wet aged Wagyu Beef has higher amounts of tiny flecks of fat called Marbling.  This monounsaturated fat makes the steak incredibly flavorful and tender.  The extra care taken to age, cut and package makes this steak an extremely satisfying meal.

The Perfect Steak:
Experience the delight of a perfectly cooked Wagyu steak every time.  Choose your steak and lightly season with sea salt and cook the steak until medium.  This achieves optimum flavor.
