CleanFish has provided an update regarding their Laughing Bird Shrimp

Fresh Laughing Bird shrimp is returning. I was in Costa Rica last month visiting several small shrimp farms, many of which are certified organic to European standards. They will pack our fresh Laughing Bird. We are running trial sample shipments right now to make sure all the kinks are worked out. I ate fresh Laughing Bird shrimp today!
By way of comparison, while Belize Aquaculture could produce 6MM lbs annually, together all of the shrimp farms in Costa Rica produce no more than 1MM lbs. Costa Rica as a country had regulations protecting the mangrove forests before they ever had shrimp farms. Costa Rica also protects crocodiles. We watched one ferocious crocodile swimming freely in one of the shrimp ponds, and feasting on the shrimp too. When the crocs become a nuisance, they are captured and released away from the farms. There was a colony of iguanas at this same farm.
Another plus for fresh Laughing Bird from Costa Rica — the shrimp are deveined. Right now we're just waiting on the plastic tubs to get to Costa Rica. If they don't arrive soon we'll start shipping in 10 lb styros. We should have fresh Laughing Bird before the end of the month.

Here's an Idea...
Bacon wrapped scallops ...we suggest you pre-cook the bacon to a point that it will still wrap around the scallop to prevent the scallop from being over cooked. Of course, using a dry-pack scallop is ideal for getting the perfect crust on the scallop.
Conveniently, we offer scallops and bacon. Finish the perfect dish with a sweet pan sauce made from mango lemonade and top it off with fruit salsa.

Predominantly living in the kelp forests of Southern California, White Sea Bass is currently being caught between the Channel Islands and Morro Bay. Surprisingly, this “White Seabass” is not a seabass, in fact it’s a member of the croaker family. It’s sometimes called a King Croaker.
Prized for its large size and good flavor, this meaty, mouth-filling, muscular, firm fish is excellent for the grill, great seared hard in a pan, broiled or even slowly cooked in a barbecue.
An additional benefit to White Sea Bass is that it’s considered a “Best Choice” by the Monterey Bay Aquarium Seafood Watch Program as the management efforts have helped California’s population recover.
Try This Recipe
Baked Sea Bass
with Olive Sauce

Ingredients
4 cloves garlic minced
1/2 can pitted black olives
(chopped)
1/2 can of pitted green olives
1 tsp crumbled dried oregano
1 tsp crumbled dried basil
2 tbl minced parsley
1 pinch salt
1 pinch freshly ground pepper
1/4 cup olive oil
2 lb Sea Bass fillets
(6 oz portions)
1/2 cup white wine
Process
Combine garlic, black olives, oregano, basil and parsley in small bowl (set aside green olives).
Season Sea Bass with salt and pepper.
Heat oil in 13x9-inch glass baking dish at 425 degrees for 1 minute.
Spread olive mixture evenly over bottom of baking dish.
Arrange sea bass, skin side up, on top of olive mixture.
Pour white wine around fillets.
Bake, basting occasionally with juices, for 15 minutes or until done.
To serve, arrange fillets, and olive mixture on heated serving plates.
Sprinkle a couple green olives on plate as a garnish.
Makes 4 servings
