While we provide our customers with “The Freshest Fish on Land”, we also have other great products. One of these products is Kendall Farms, Crème Fraiche.
Kendall Farms Crème Fraîche is a white or Béchamel sauce. There is no flour and only 50 calories per serving. It contains no emulsifiers or stabilizers and has an amazing shelf life. For the carbohydrate conscious, rejoice because there are none and unlike traditional Roux (flour and butter) it does not require reduction.

Caviar Dip
Makes 2 cups
1 cup sour cream
½ cup Kendall Farms
Crème Fraîche
¼ cup fresh chives,
finely minced
4 oz. Golden Caviar
Juice of 1 lemon
3 hard boiled eggs; sieved
1 Tablespoon crushed green
peppercorns
Salt and Pepper to taste
Place all ingredients in a bowl and stir until well mixed. Refrigerate 2-3 hours, taste and adjust seasoning to taste. Serve with raw vegetables or unsalted chips.

Local Sabelfish
Give this local favorite a try, it’s very versatile and easy to work with.
Often referred to as Blackcod, Sablefish came to be appreciated several centuries ago by the Makah Indians who fashioned kelp-fishing lines and hemlock hooks to capture their prized fish.
Locally Hook and Line Caught and/or Trap Caught, these fish are loaded onto the boat live, chilled and handled to the highest standards to ensure quality and freshness. This premium quality whitefish has a rich oil content, that is exceptionally flavorful and an excellent fish for smoking.

The ones you love for sunny days on the lake, BBQing with family and friends or just a quick, cool meal for two. Working with various grocery stores we publish recipes from local restaurants for display, and we’d love to feature yours. You’d be recognized for the recipe, of course.

Holding true to our commitment of being an environmentally responsible and sustainable directed business, we have been evaluating our shrimp suppliers and researching alternatives to the Red Rated items.
We have begun to phase out the Shell-On Tiger shrimp, which is imported from India, Bangladesh and Indonesia, and rated red. Fortunately, we have found Wood’s Shrimp to help us in our efforts.
Located in Florida, Wood’s environmental friendly farm is located inland and they use tanks to avoid environmental impacts. In doing so they received a green ranking from FishWise for being a closed containment facility.
Wood’s starts with a white shrimp (Panaeus Vanemei) hatched in the Florida Keys, and then transport them to their facility in North West Florida when they are just a few weeks old. They do their best to mimic a natural system that helps to produce a vibrant, healthy, firm and very surprisingly sweet flavorful shrimp.
Available in 16/20 and 21/25 sizes, these shrimp are competitively priced and taste sweeter than the imported Tiger shrimp.
